Em's Chocolate Brownie
This is my own not-so-secret recipe. There's not much 'healthy' about it, although I do make it with quinoa flour so that's got to count for something - right?!
Anyway, the key to healthy living is to enjoy everything in moderation - this goes well with a nice cuppa or served warm with a decent drenching of double cream as an indulgent pudding, enjoy!
Ingredients
125g coconut oil (butter or rapeseed oil if you prefer)
100g milk chocolate
50g Ground Almonds
80g Cocoa
70g Quinoa Flour
1 heaped teaspoon baking powder
250g Caster Sugar
4 Medium Eggs
Method
Pre heat the oven to 180c
Grease or line a 25cm square baking tin.
In a large glass heat proof bowl place the chocolate and the oil and set it over a pan of simmering water. Do not allow the bowl to touch the water.
Stir until glossy and set aside.
In a bowl mix the cocoa, flour, sugar and almonds then pour into the chocolate mixture. This makes a very thick paste.
Whisk the eggs in a cup and add to the mixture.
Mix well until smooth and silky.
Pour into the prepared tin and cook for around 25 minutes. The top will look crusty yet the brownie beneath will still be quite soft.
Allow to cool. Cut into slices and store in air tight container. Enjoy!
